CAFE - LEAD COOK
POSITION OVERVIEW
An employee in this position is directly responsible for food preparation, food quality, merchandising, customer service, and complying with all food safety standards.
GENERAL DESCRIPTION/DUTIES AND RESPONSIBILITIES/ESSENTIAL JOB FUNCTIONS
· Coordinate the timing of ordering and production schedules
· Maintains a positive work environment with fellow employees throughout the store
· Production of sandwiches, salads, entrées, catering trays, soups and/or other food items for hot and cold cases
· Counter work when needed
· Order and maintain inventory of all foodstuffs utilized in the department
· Ensure all prepared items are properly packaged, labeled, dated, displayed and rotated
· Ensure all foodstuffs are properly stored following all health-regulation standards
· Ensure that production is completed using correct measuring devices, proper handling procedures and techniques and all recipes are accurately followed
· Follow and comply with all procedures to adhere to safe and sanitary work practices
· Maintain food loss and spoilage sheets
· Fulfill customer’s cafe order requests in an efficient, friendly and neat manner
· Keep the Deli/Cafe Department neat, organized and clean
· Train new staff in a thorough, complete and professional manner
· Help control department expense and minimize product waste
· Monitor equipment (including but not limited to: fryers, roasters, ovens, coolers and cases) to ensure they are in working order, neat and clean
· Expected to be familiar with the entire store and it’s layout to ensure top customer service

· Experience with and knowledge of USDA regulations, COOL rules, and OSHA standards
· Knowledge of perishables
· Excellent communication and leadership skills: includes, but is not limited to, open communication with staff members, the ability to team-build and lead by example with a hands-on approach, the professionalism to train and mentor staff, exhibit professionalism when interacting with customers at all times)
· Strong interpersonal skills; open door policy with staff, build relationships with vendors and customers, and handle disciplinary actions with professionalism.
· Basic math skills for ordering, inventory, and to measure and weigh products for production purposes.
· Must have the ability to calculate costs for batches and units to determine proper retail pricing.
· Strong multi-tasking and problem solving skills.
· Must be highly motivated with a sense of urgency and the ability to work in a fast-paced environment with all levels of employees and minimum supervision.
· Knowledge and practice of safe knife handling skills, cross-contamination prevention, food storage and proper cooking temperatures
· Strong organizational skills
PHYSICAL REQUIREMENTS
· Requires standing, walking, bending, climbing throughout the entire work day
· Ability to lift, stack, and maneuver heavy objects weighing up to 50 lbs. or more
· Weekend, evening, and holiday work will be required; flexible store assignments and hours
EDUCATION AND WORK EXPERIENCE
·18 years or older
High school diploma or equivalent
· 3-5 years cooking experience
· Appropriate food handler’s certification
Qualifications:
Strong interpersonal, leadership, communication and organizational skills
Experience in a high-volume restaurant or retail setting
Requirements:
Requires standing, walking, bending, and/or climbing throughout the entire workday
Repetitive arm and hand movements; bending, carrying, and lifting
Requires transferring product either horizontally or vertically of up to 30 pounds
Weekend, evening, and holiday work will be required; flexible store assignments and hours
