Accessible only by boat, plane, or hiking trails, the North Cascades Lodge at Stehekin is a laid-back remote little place on the shores of Lake Chelan within the North Cascades National Park. Stehekin has about 75 permanent residents, though its population swells during the summer. The passenger ferry runs daily from Chelan and Fields Point during the summer months and less often through the winter. Stehekin is very close to the Pacific Crest Trail. Trout and sockeye salmon are popular targets for fishing in Lake Chelan and if you are into hiking, extreme or mild, you will love it here. Bicycles are available for hire and are easily transported up on the ferry as well. JOB SUMMARY The Lead Cook will manage the kitchen staff in the daily production, preparation, and presentation of all food for the lodge's restaurant, in a safe and sanitary work environment. Involved in creating exceptional dishes and daily specials. Must ensure all food is served according to specifications and be responsible for supervising all areas of the kitchen working in conjunction with all Line Cooks and Second Lead Cook. ESSENTIAL FUNCTIONS * Instructs and leads kitchen staff in the preparation, cooking, garnishing, or presentation of food. * Monitor and Assess performance of employees to make improvements or take corrective action. * Monitor menus and spending in order to ensure that meals are prepared economically. * Prepare and cook foods of all types, either on a regular basis or for special guests or functions. * Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs. * Determine how food should be presented and create decorative food displays. * Operate food station, including performing station checklist, temperature log, counter meeting, and signage. * Requisition food supplies, kitchen equipment, and appliances, based on estimates of future needs * Clean and inspect kitchen equipment, kitchen appliances, and work areas in order to ensure cleanliness and functional operation. * Prepares thawing, prep work, delegates side work, stocking lists and cleaning assignments. SKILL AND KNOWLEDGE REQUIREMENTS INCLUDE * Four years of work-related experience, on-the-job training, and/or vocational training. * Determine production schedules and staff requirements necessary to ensure timely delivery of services. * Food Safety certified- monitors sanitation practices to ensure all employees follow standards and regulations. * Strong customer service abilities; actively looks for ways to assist customers and coworkers. * Prior experience in a lead or supervisory capacity required. * Strong customer service, time-management, organizational and interpersonal skills. PHYSICAL AND MENTAL REQUIREMENTS * Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the unit.
