As Assistant Manager Stewarding you are responsible for ensuring the highest standards of cleanliness are maintained and that the Sanitation Program is followed at all times in all kitchens, staff canteen and food outlets (including dishwashing and sanitation of chinaware, glassware and silverware) but not limited to assist in supervising all stewards ,to ensure that all kitchen equipment is handled and maintained properly at all times, to ensure that a standard service is provided at all times and to deal with guest complaints and comments in an efficient and timely
Your day to day
To perform regular inspections and to follow up accordingly to ensure proper cleaning procedures and maintenance of all kitchens, staff canteen and food outlets (including dishwashing and sanitation of China, Glassware and Silver).
To support all the kitchen stewards when needed.
To guide the kitchen stewards and to ensure that everyone is updated with relevant information at all times.
To ensure that daily cleaning procedures and maintenance of all kitchens, staff canteen and food outlets is following the latest Health and Sanitation regulations and that all sanitation log sheets are fully updated and completed at all times as per company policy.
To ensure that all kitchen equipment is handled and maintained properly at all times.
To adhere to, and to ensure that the kitchen stewards adhere to all company policies and procedures, manuals and directives.
To monitor and control the use of cleaning materials and consumables for the kitchen stewards.
To control water consumption and limit water damage on equipment by ensuring proper and effective use of water during cleaning
To ensure that company property is maintained properly and treated with respect at all times.
Wears uniform with Pride and honor.
Ad-hoc duties – unexpected moments when we have to pull together to get a task done
What we need from you
Certificate in culinary arts
5 years’ experience in Stewarding Department
Must speak local language(s)
At least one year in a supervisory capacity, or equivalent combination of education and experience.
