[[Job Purpose: [[The Prep Cook makes all salads and prepares raw product to be used by the line cooks in the preparation of entrees, appetizers, and side items. *[[Duties and Responsibilities:]{calibri",sans-serif"=""}]{lang="EN-US"}]{calibri",sans-serif"=""}]{lang="EN-US"}]{calibri",sans-serif"=""}]{lang="EN-US"}* - Sets up work area, equipment, and utensils according to restaurant guidelines. - Understands and possess knowledge of proper use and maintenance of all equipment in the kitchen - Reads prep list for daily assignments. - Follows recipes, portion controls and presentation specification as set by restaurant {=html} - Reads tickets processed through the POS system. - Prepares items ordered through the POS system according to recipe book, in sanitary and timely manners. - Always maintains safety and sanitation standards. {=html} - Covers, labels, dates, and stores prepared products. - Rotates products according to FIFO (first in, first out) principle. - Maintains high standards of personal hygiene in compliance with local health ordinances. - Cleans work area, stores utensil, disassembles, and cleans equipment. - Assists with organization of kitchen, walk-in cooler, refrigerator, freezer, and storage area. - Works as a team player. - On occasion, the Prep Cook will need to operate the dish machine and may be required to prepare salads and raw product for use on the cooks line and other duties as assigned by the supervisor. - Performs other support duties as assigned by kitchen manager.
