State of Massachusetts PM IV - Deputy Director of Food Services at SBCC in Shirley, Massachusetts
_Duties:__ · To assist in managing the overall food service operation at Souza Baranowski Correctional Center. · Monitoring menus to ensure adherence with the Department of Correction cycle menu, recipes and/or product specifications. · To ensure that all food produced at SBCC is nutritionally adequate, handled in a safe manner and prepared in according to the Department of Corrections recipes. · Oversee the monitoring of “as served “menus with supporting documentation for any/all variances. · To assist in the monitoring of all Medical and Religious Diets to ensure compliance in a coordinated effort with Health Services and the Director of Treatment at SBCC. · To monitor compliance with minimum health and sanitation standards in accordance with D.P.H., ACA and PDCU policies for SBCC. · To develop and implement monthly sanitation and maintenance report that will be site specific to any noted deficiencies. · To act as a liaison between the Food Service Director, Directors of Engineering and the Superintendent and Deputy Superintendent regarding matters of sanitation, maintenance issues and any food related issues that are noted. · To assist in the monitoring of ACA standards and documentation for the Food Service operation. · To act as a liaison between Director of Treatment, Health Services Unit, Superintendent, Deputy Superintendent, and the Food Service Director to ensure compliance specific to Medical and Religious Diet adherences. · To assist monitoring to ensure that all food delivered to the satellite locations at SBCC are handled in a safe and sanitary manner. · To implement a preventive maintenance equipment, form as a means of follow up to any issues that involve kitchen equipment at SBCC. · To assist the Food Service Director in the monitoring of Uniform Staff attendance. · To assist in the monitoring of food deliveries to ensure accuracy with original purchase requisitions. · To assist in the monitoring of weekly expenditures vs. year-to-date budgeted numbers. · To be able maintain a flexible schedule to ensure full coverage in and around meal service times. *Preferred Qualifications:* _ Must be ServSafe Certified. Four years’ experience in the management of institutional food service operations. MINIMUM ENTRANCE REQUIREMENTS: Applicants must have at least (A) four (4) years of full-time or, equivalent part-time, professional, professional internship, administrative, supervisory, or managerial experience in business administration, business management, public administration, public management, clinical administration or clinical management or (B) any equivalent combination of the required experience and substitutions below. Substitutions: I. A certificate in a relevant or related field may be substituted for one (1) year of the required experience. II. An Associate's degree in a related field may be substituted for one (1) year of the required experience. III. A Bachelor's degree in a related field may be substituted for two (2) years of the required experience. IV. A Graduate degree in a related field may be substituted for three (3) years of the required experience. V.
