ASM Global Executive Chef in Richmond, Virginia

POSITION: Executive Chef

DEPARTMENT: Food & Beverage

REPORTS TO: Director of Food & Beverage

FLSA STATUS: Salaried Exempt

ASM, the leader in privately managed public assembly facilities, has an excellent and immediate opening for an Executive Chef at Altria Theater, and Dominion Energy Center. Candidate will be hands on preparing meals for high end events including corporate meetings, receptions, and social gatherings as well as ordering goods and maintaining accurate inventory and financial records.

Major and Supervisory Responsibilities

  • Designs creative menus, analyzes recipes, and determines proper prices for items to be sold at

  • Maintains quality standard when preparing and serving food

  • Performs interviews, hires, schedules, and supervises kitchen staff

  • Participate in regular catering and event meetings

  • Conducts safety, sanitation, and maintenance in kitchen

  • Maintains food costs while ensuring quality standards are met

  • Manages inventory of all kitchen supplies areas in both venues and ensures all equipment is working and maintenance logs up to date

  • Orders all food and develops rapport with our numerous purveyors

  • Leads kitchen staff while they prepare for events and maintains portion size, proper garnishing of food, and proper handling

  • Carries out managerial responsibilities in accordance with ASM’s policies and applicable laws

  • Disciplining employees in conjunction with HR; addressing complaints and resolving problems

  • Ability to work under limited supervision

  • Requires flexible hours that may include nights, weekend, and holidays that vary based on events

  • Candidate will manage a kitchen staff of up to 10-15 people

Qualifications

  • Certificate and/or degree from accredited culinary school, college, or technical school. If none, experience must exceed standards listed above.

  • 3-5+ years of upscale, fast-paced kitchen/culinary management

  • Ability to train in use of basic kitchen methods and kitchen equipment

  • Ability to know market values and price appropriately

  • Crisis management skills

  • Serv-Safe or similar required

  • Previous experience with inventory control, invoice management, and cost tracking in food and beverage

  • Ability to lift and/or more up to 100lbs

Computer Skills

  • Proficiency in Microsoft Suite, Microsoft Teams for communication, scheduling and documentation tasks
