Tioga Downs Casino Resort Asian Cuisine Chef in Nichols, New York

Tioga Downs is filling the exciting position of an Asian Cuisine Chef to manage Fin & Pho, our in-house Sushi & Wok Bar. The Chef is responsible for ensuring an exceptional experience for Casino guests and associates though production of high-quality dishes, maintenance of impeccable cleanliness, and delivery of friendly, fun, and efficient service.

As a direct supervisor, the Chef's responsibilities include interviewing, hiring, and training associates, planning, assigning, and directing work, appraising performance, rewarding and disciplining associates, addressing complaints and resolving problems.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

•Provides excellent guest service while actively supporting the company culture of creating a fun and entertaining experience for internal and external guests.

•Hires, trains, supervises, and motivates all hourly Associates for Fin & Pho.

•Coaches, counsels, or disciplines Associates up to and including termination.

•Upholds excellent kitchen sanitation conditions at all times and complies with all local, State and Federal regulations regarding food service.

•Develops and Costs Menus. Create and implement specials as needed.

•Orders products and supplies, maintaining appropriate stock levels with regard to stock and spoilage, controlling cost within approved budgetary controls.

•Oversees the planning, production, preparation, portioning, and garnishment of all foods.

•Participates in and presides over departmental and venue meetings facilitating the flow of pertinent information between management and associates.

•Works with various departments in resolving venue conflicts and disputes as needed, ensuring high standards of customer service and associate relations.

•Collaborates with Marketing Dept. and Food & Beverage Director to promote business prospects and positive image of Fin & Pho to the community.

•Other duties may be assigned.

EDUCATION and/or EXPERIENCE:

  • Minimum of Associates Degree in Culinary of Hospitality Management or equivalent experience and apprenticeship AND

  • A Minimum of 3 years previous experience as a chef in a full-service, Asian dining restaurant with progressive supervisory experience.

  • Extensive knowledge of Pan-Asian Cuisine and fresh seafood, including fresh shellfish.

  • Strong working knowledge of full-service sushi bar.

PHYSICAL DEMANDS:

While performing the duties of this job, the Associate is regularly required to use hands to finger, handle, or feel objects, reach with hands and arms, and talk or hear. The Associate frequently is required to stand and walk.

The Associate must regularly lift and/or move up to 25 pounds, frequently lift and/or move up to 50 pounds, and occasionally lift and/or move more than 100 pounds.

Fin & Pho is open Wednesday-Sunday and typically operates between 4PM-12AM (Wed-Sat), 1PM-9PM (Sun). Because we serve guests of the Casino, weekend availability is necessary.
