UNC Health Care Manager, Foodservice Production in Hendersonville, North Carolina

Summary:

This position is directly responsible for the successful operation of the Culinary Department. The Production Manager ensures client, customer service/satisfaction with efficient management of cost. This position is responsible for all foodservice related activities which includes managing the daily operations of the kitchen area, implementing the production process, managing food cost / labor cost and having overall understanding of Hazard Analysis Critical Control Point (HACCP). This role is also responsible for developing, mentoring and coaching cooks / production team members.

Responsibilities:

• Oversees, plans and coordinates the preparation of all hot and cold food for all service areas according to planned quantities for appropriate menus of standardized documented recipes.

• Ensures the use of proper equipment and techniques as defined by recipes and policies.

• Leads and directs the training and workflow of team members within the Production area, including conducting regular production meetings and distributing information and opportunities affecting the production area and the areas they serve.

• Participates actively in the hiring and accountability of staff within the production area.

• Delegates tasks and defines workflows in the food preparation area, including making improvements for efficiency and employee engagement.

• Monitors budgetary responsibilities to include labor costs, food costs and capital equipment maintenance and replacement.

• Ensures that staff Clean and sanitize equipment after each use and ensures work area is well organized, cleaned, and sanitized.

Qualifications

Required

• High school diploma or equivalent

• Five (5) years of experience preparing/cooking food in a commercial setting.

• One (1) year of experience performing in a supervisory or leadership capacity

Preferred

• Experience working in an institutional foodservice setting.
