Position Statement
The Stewarding and Hygiene Manager oversees and leads all aspects of the stewarding operations and hygiene standards under the general guidance of the Executive Chef, ensuring alignment with Hilton’s established policies and procedures.
This role is responsible for upholding and enforcing stringent hygiene standards across all kitchen areas, equipment, and utensils, ensuring compliance with local health regulations and global best practices. He or She directs the stewarding team to maintain impeccable cleanliness and sanitation while fostering a culture of operational excellence, safety, and sustainability. By driving hygiene initiatives and maintaining quality standards, this role contributes to guest satisfaction, employee engagement, and hotel profitability.
What will I be doing? Position Summary
As the Stewarding and Hygiene Manager , you will be responsible for performing the following tasks to the highest standards:
Stewarding Operations
- Maintain high customer service focus with customers in mind.
- Have a positive attitude, take responsibility, and take initiative to resolve issues while communicating clearly with customers and colleagues.
- Guide and supervise Steward Supervisors and Stewards in their roles.
- Control and analyze cleanliness standards for kitchen areas, banquet rooms (back of the house), equipment, utensils, guest and team satisfaction, operating supplies, cleaning supplies, payroll, related costs, breakage, and loss.
- Implement a detailed cleaning program as scheduled, monitor the results, and adjust actions to meet standards.
- Stay updated on new cleaning supplies, equipment, trends, and systems in stewarding.
- Assist stewards during operations and ensure proper handling and maintenance of all kitchen equipment.
- Safekeep and maintain inventory of flatware, glassware, hollowware, utensils, and other operating equipment.
- Ensure cleaning supplies and equipment are adequately stocked and maintained.
- Maintain and update operating manuals, chemical charts, and cleaning reference materials for the team.
- Prepare and monitor requisitions for chemicals, cleaning equipment, and operating supplies.
- Conduct monthly operating equipment inventory and report breakages and losses.
- Coordinate with Engineering for preventive maintenance of kitchen equipment, including exhaust systems, drainage, refrigerators, and burners.
- Inspect all stewarding supplies and equipment received to ensure compliance with established specifications.
Hygiene and Sanitation Management
- Ensure all kitchen areas, canteens, and storerooms meet local and international hygiene and sanitation standards.
- Monitor and maintain sanitation levels of the garbage room, ensuring proper waste segregation and disposal.
- Update and review cleaning products, purchase specifications, and cleaning methods to ensure the highest possible hygiene standards.
- Provide active supervision during the implementation of hygiene and cleaning schedules.
- Conduct regular inspections of kitchen and back-of-house areas to ensure compliance with hygiene standards.
- Train team members on hygiene protocols, sanitation procedures, and safety practices.
- Monitor compliance with fire safety, food safety, and health regulations as they relate to stewarding and hygiene operations.
- Prepare hygiene audit reports and address identified issues promptly.
Operational Planning and Support
- Monitor banquet functions, outlet promotions, and events to plan the provision of equipment and manpower.
- Establish contacts with other hotels to secure additional equipment for large events.
- Assist in restaurant and bar operations during busy periods or special events.
- Plan and ensure adequate resources are available for all shifts and functions.
- Review and update hygiene practices based on new regulations and hotel policies.
Team Leadership and Development
- Ensure proper communication and teamwork within the stewarding team and other departments.
- Keep the team updated on departmental, hotel, and company activities through regular meetings and memos.
- Assist with the selection, training, coaching, and development of team members to meet current and future departmental needs.
- Assess team performance against hygiene and operational standards, providing constructive feedback.
- Delegate tasks effectively, ensuring all team members understand their responsibilities and roles.
Health and Safety
- Ensure the health, safety, and well-being of all customers and team members.
- Monitor and enforce proper safety procedures related to stewarding operations, equipment handling, and sanitation.
- Coordinate with Finance and Security for proper disposal and processing of sales-related waste.
- Respond to and report all accidents and incidents promptly.
Additional Responsibilities
- Carry out any other reasonable duties and responsibilities as assigned by management.
- Actively seek verbal feedback from customers and team members to improve service and operations.

·High School diploma or equivalent.
·Minimum of5 years working experience in a 5-star category hotel.
·At least1 yearof Assistant Chief Stewardexperiencein an international brand hotel.
·Possess a validhealth certificate.
·Posses HACCP certification.
·Able to train and motivate team members.
·Able to set priorities and complete tasks efficiently.
·Work well in stressful situations, remain calm under pressure and able to solve problems.
·Able to work in a moist, hot and sometimes loud environment.
·Guide and direct the Stewarding team to perform at their best level in terms of quality, hygiene and profitability.
·Flexible, responds quickly and positively to changing requirements including the performance of any tasks requested of you.
·Maintain high team focus by showing co-operation and support to colleagues in the pursuit of team goals.
·Approach all tasks with enthusiasm and seize opportunities to learn new skills or knowledge in order to improve personal performance.
·Proficient in Microsoft Word and Excel.
·Good command in English, both verbal and written to meet business needs, preferred.
·Working experience within Hilton Group, advantageous.
