SOS International LLC Afghan DFAC Food Services Manager (OCONUS) in As Sayliyah, Qatar

Overview * This position is contingent upon contract award * SOSi is seeking a highly qualified Dining Facility (DFAC) Food Services Manager to lead and oversee food service operations in support of the Afghan guest community under the CARE Life Support Services contract. This position is responsible for supervising personnel and optimizing resources to ensure the efficient delivery of three nutritious meals daily. Essential Job Duties • Manage the Afghan dining facility that serves at up to 3,000 patrons per day. • Ensure meal items are delivered per Halal dietary requirements/guidelines, meeting the nutritional needs and preferences of our Afghan customers. • Ensure menu and recipes adhere to Afghan culinary traditions and dietary preferences. • Ensure menu incorporate fresh ingredients and authentic spices. • Develop and implement a monthly Afghan menu plan that accommodates regulations with respect to nutritional value, variety, and Afghan cultural preferences. • Manage Afghan DFAC staff to support food service operations at the DFAC along with hours of operation. • Ensure that food prepared in the main dining facility is packaged for transportation and served safely at the Afghan DFAC. • Ensure Mermite food transport containers are cleaned and sanitized after every meal. • Establish a monthly DFAC council meeting to gain feedback and make necessary menu and recipe changes based on customer feedback. • Develop schedule and quantities for weekly fresh fruits and vegetables (FFV) deliveries. • Manage an efficient food ordering, receipt, storage, and issue program. • Manage the maintenance of an impeccable food safety and hygiene program. • Assure the Afghan dining facility is appropriately staffed each day. Manage food service workforce. • Ensure all meals are consumed onsite at the Afghan DFAC and no food leaves the DFAC except for support. to Afghan patients at the medical facility and children at the day care center. • Prepare reports for monthly internal and customer reviews. • Manage patron comment and suggestion program. Minimum Requirements • Bachelor’s degree in hotel/restaurant management, food service management or related field or technical/vocational school or culinary school or equivalent experience. • Three years’ experience as an Aghan chef or five years’ experience as a cook, cooking Afghan cuisine. • Serve-Safe accredited at the managerial level. Other relevant certifications such Food Protection Manager certification (FPMC) or Foodservice Management Professional (FMP) Accreditation are desirable. • 10 years’ experience managing related food services operations, with a minimum of 5 years in large and complex operations greater than $10 Million in annual operations. • Experience, particularly in the range of $100 Million or more is highly desirable. • Experience in high volume settings such as busy restaurants, catering companies, mall food courts, hotel banquet halls or institutional settings to be equipped for the demand of serving 2,000 to 4,000 people daily is imperative. • Must be able to optimize kitchen layout space to fit high demand needs. • Must be able to plan Afghan menus effectively and align food production with the needs of the current Afghan population in Doha. This includes proper inventory management to reduce food spoilage such as rotating stock of perishable items. Must show detailed knowledge of managing food waste. • Must identify and understand the cause of food waste in operations such as overproduction, spoilage, and plate waste. • Train staff effectively of the importance of managing food waste while also meeting daily/weekly service goals. • Ensure that operations aim for a Food Cost Percentage of 30% or lower. • Proven leadership abilities with a track record of effectively managing teams and projects to successful outcomes. • Experience leading multidisciplinary teams and fostering a collaborative work environment is essential. Work Environment • Long hours, exposure to weather and hazardous conditions. • Shared kitchen requires close monitoring to prevent cross contamination. • Personnel should be aware of moving on short notice and under adverse conditions.
